THAI GREEN CURRY

​Thai Green Chicken curry's' colour predominantly comes from green chillies and although the Thai name for the curry describes it as sweet, its' more noticeable characteristic is that it tends to be more pungent than the milder Red curries. Green curry is a central Thai dish and was invented during the reign of King Rama 6 or Rama 7, between the years 1908-1926.

You'll need

Instructions

The Spice Mix
100ml Oil
600ml Water
1.5kg Chicken
450g green beans (or other)
​225ml Coconut Milk
Optional – Coriander and/or Ginger

Simply add oil, water and diced chicken to saucepan and bring to the boil. Add the vegetables and bring to a simmer, then add spice mix, stir well. Finally add the coconut milk and continue to simmer until chicken is cooked through. Garnish if desired.

SERVES 8 TO 12 

Tips - Traditionally thigh fillets are used but chicken on the bone is also delicious.
​Also great with Beef, Vegetables, Seafood & Lamb.
